I enjoyed this black bread very much. Probably, it helped that I had actually witnessed the La Tasca Restaurant chefs inking the rice to perfect the black paella, paella negra. As a waiter I took food orders from mostly white Scottish customers, and what really intrigued me, (of course I found it funny also) was the countless hesitations from most customers to say paella negra out loud.
The paella was just like any other rice I knew. The ink, for me, did not have any taste.
